Fionnhula began her time here as a cafe trainee, but enjoyed it so much that they couldn't get rid of her!
She graduated with a degree in Environmental Geoscience and has worked in conservation with the National Trust.
From cooking at home for friends and family, part time work in pubs, restaurants and for catering companies she decided that working with food was something that made her happy. However she wanted to work somewhere where sustainability, the environment and healthy eating were combined with tasty affordable food.
She learnt how to cook vegetarian meals at home from her mother. While travelling in New Zealand she was introduced to a more healthy way of cooking, and started to think more about creating nutritionally balanced meals using fresh organic produce from the garden, along with other whole foods. Usually followed by a treat such as vegan cake!
